Cost:
A $100 non-refundable deposit reserves your lamb. You can pay in person or through PayPal. The remaining balance for the live lamb is due to us before you pick up your meat ($400-$600 total, depending on the size of your lamb). You can expect a 10-month-old lamb weighing 100 pounds “on the hoof” to hang at 45-55 lbs.
You must pick up your own meat from Wagoner Meats (Ripley, OH) and a processing fee is paid to them upon pickup. At Wagoner Meats, the fee is $120 per head, and they take cash, check, or Venmo.
Usually, the entire lamb will cost you around $600, which includes the deposit ($100), processing/custom cutting fee ($120), and meat ($10/lb - 45-50 pounds). This is typically about 20% less than what you’d pay for the same set of cuts at a grocery store. A leg roast alone at the grocery store is over $50, and a crown roast is over $100!
We take lamb reservations first-come, first-served. Lambs usually sell out months in advance, so get your reservation sent early!
Time Frame:
Our lambs are born in January, and we butcher when they are about 10 months old. So market-weight lambs should be available Oct/Nov, just in time for the holidays! We occasionally also have cull ewes (mutton) available ($5 per pound).
We’ll be in contact with you close to butcher time, to check your availability to pick up your meat.
What to Expect:
If you pay in person, we have a cut list available for you to fill out which will go to the butcher shop along with your lamb. If you do not fill one out ahead of time, Wagoner Meats will call you within a day or two of butchering to walk you through several decisions you need to make, such as whether you want stew meat or ground meat, roasts or chops, etc. Don’t forget that sheep only have two racks of ribs, two leg roasts, etc. - so don’t try to ask for six leg roasts, or everything cut into loin chops. ☺
We send the lamb to the butcher on a pre-arranged date. The butcher will call you when your frozen meat is ready for pickup – usually 1-2 weeks following slaughter. A whole lamb, cut and wrapped, amounts to about an average cooler-full of meat, and can fit into an above-the-fridge style freezer. A 100-pound lamb has a hanging weight of about 45-55 pounds, which results in about 35 pounds of packaged meat.
